View Full Version : Favorite Tailgating Recipes

Lets hear it guys.
I'll start it off with a Texas Chili I like to do:
* 20 small dried hot chili peppers
* 2 tablespoons chili powder
* 3/4 pound beef round steak, cut into 1/2-inch cubes
* 2 tablespoons cooking oil
* 3/4 pound boneless pork, cut into 1/2-inch cubes
* 1 cup chopped onion
* 3 cloves garlic, minced
* 1 tablespoon ground cumin
* 1/2 teaspoon paprika
* 1/4 teaspoon ground black pepper
* 1 14-1/2-ounce can beef broth
* 1 12-ounce can beer
* 3 cups cooked pinto beans or black beans
* Sliced jalapeno peppers
Directions
Crush hot chili peppers. Remove stems and seeds from ancho peppers, if using; cut into 1-inch pieces. Stir together crushed red pepper and chili powder. Set aside.
In a large saucepan or Dutch oven cook half of the meat in hot oil until brown. Remove meat and set aside. Add remaining meat, onion, garlic, cumin, paprika, ground black pepper, and ground chili pepper mixture. Cook until meat is brown. Return all meat to saucepan. Stir in beef broth and beer. Bring to boiling. Reduce heat and simmer, covered, for 45 minutes. Uncover and simmer about 30 minutes more or until meat is tender and sauce is desired consistency, stirring occasionally. Stir in cooked pinto beans and continue to cook/stir for 5-10 minutes. Garnish with sliced jalapeno peppers, if desired. Makes 6 servings.

Crab DIP! (as designed by a fellow Bucs fan)
1/2 cup finely minced yellow onion
1/2 heavy cream
1 pkg.(8 oz) cream cheese
1 pound lump crabmeat
1 teaspoon chopped parsley
1/2 cup mayonnaise
1 teaspoon chopped chives
1 teaspoon chopped basil
1 tablespoon finely minced garlic
dash of salt, freshly ground black pepper and cayenne pepper

What's irresponsible about 6 beers?
There isn't. Most people imbibe tons on gameday... meaning 6 beers is normally a good starter house.
(divide # of beers by two, and i play along)

dip (if i'm feeling ambitious)
keep it simple for tailgating. save that fancy **** for when the queen comes to visit. crab dip. buc fans.

Awesome! Big, big rugby city here. Not as big as my old hometown though, Leicester.
Gloucester's team is legit though and I'm practicing with them for a week. Should be a good time.
Chili Cheese Dip
One of my favorites is really, REALLY simple to make.
1 can Hormel Chili (no beans)
3/4 stick of Velveeta cheese
Cut cheese up, pour chili on in a pan. It will look like garbage at first, but put in the microwave for a minute with a top on.
Take it out, stir it up, and repeat 3 times. Make sure you take a spoon and get the chili off the side of the pan. It is sooooo good when it is finished. It will be somewhat soupy, but it thickens after a little bit.

anyway.
i don't normally eat brats... since it is the favorite food of cheeseheads.
i stick with high quality vienna beef italian sausages.

So, ASU and the City of Tempe have taken a lot of fun out of tailgating:
a) No Hard liquor is allowed. Only beer and wine.
b) No glass bottles.
c) No beer games or games they force people to drink. This includes beer pong and flip cup.
d) No charcoal grills are allowed.
e) Tailgating starts at 3.5 hours before the game. Cars are not allowed into the parking lots earlier.
Georgia fans got really mad at us this year because of our strict tailgating regulations. =(
