I had an awesome Cheddar-Gorgonzola omelette for breakfast, and it got me thinking about cheese...

Ah yes, provolone. Served best with roast beef, surely a formidable cheese. My apologies for forgetting dear provolone.

Cheeses are too specialized to choose just one. I use a different one for everything and love them all. I guess the right answer is "quality."

I happen to like different cheeses for different things. I like American and Monterey Jack on burgers and eggs. I like American and Muenster on sandwiches. If i'm just eating cheese with crackers or something of that sort, I like jarlsberg.

How can you leave off Pepper Jack? Put that on a grilled sub and you will not be disappointed, I promise.

Dude, where is the Parmesan? Its easily the best, sharp, salty, tangy a great cooking cheese.
As for just eating plain I'd have to say Cheddar.

yea I can remember getting these huge ass bricks of it when I was a little kid. I haven't had it in forever, but like you said it's basically the same thing as velveeta. I loved that stuff. :)
