Todd Collins, Ken Dorsey, Derek Anderson, Kyle Boller, scream QB coaches to me. David Garrard also strikes me as someone who could look into being a QB coach down the road.
Todd Collins is the only backup QB you mentioned who I could actually see as a QB coach.

Mike Brown is going to make a helluva coach someday if he decides to pursue the opportunity.

Eric Weddle will be a fine DBs coach someday.

Lol Chad Ocho as a Coach.. Would he coach end-zone celebrations?

Drew Brees would be an excellent QB's coach... he pretty much plays the position by the textbook.

I think Kevin Mawae could be a very good O line coach, perhaps head coach, and Jevon could be a defensive line coach. I think Troy Polamalu could be as well if he chooses too.

Kerry Collins could probably be a quality QB coach.

Out of everyone being mentioned, the last guy i could see as a coach is Ray Lewis. Yeah he's an amazing player and i'm sure he would be a bad ass coach, but i don't think he would ever do it.

Chad Pennington would make a great OC.

Just because you're a great player, you won't necessarily be a great coach.

There's even less coaching positions than playing positions.
