I'd say machego and pecorini are the best cheese along with a dutch chili gouda, which is just amazing. Use hot mustard as a dip and have a good, dark beer with the gouda and you're in heaven.
At the other end of the spectrum is blue cheese. Probably the worst food ever invented. Why eat spoiled food? I don't get it..

Provolone on a cold cut is hard to beat, doesn't have a ton of taste but it works well with italian meats and some dressing.
I think Splat mentioned pepper jack cheese on top of chili...NEED a bowl
