Well 3-4 defenses are hard to run in high school and pop warner because its hard finding the guys big enough to anchor the line,.....id go with traditional 4-3,the kids will learn the system easier and youll most likely be able to get kids around that size range.

My HS team has such an elaborate defense. There's an Anchor (strong side DE), Monster (strong side DE), DT (weakside DT), DE (weakside DE), Mike (strong side ILB), Eagle (strongside ILB), Stud (weakside LB/DE), Rambo (free safety), Forced Corner (strong side CB/LB), Close Corner (weakside CB), and Safety.
It looks kinda like this

I like the 3-4 for video games, but in real life I'd expect the 4-2-5 or 3-3-5 to be the best bet.

3-3-5 should be use more often, because High Schoolers are getting more athletic but not as big. its good to have the fat guys in front and let the "Playmakers" make plays

The 'strong' side for us is the side with the TE. The Mike group (the Mike, Stud, Anchor, Monster, and Forced Corner) is always opposite the TE. I messed up the way I named them, but the drawing is right.
Our defenses are fairly similar.
