Mike James, Miami. While he may do nothing great, he does everything very well. He will make someone a very good back-up. Kind of like the rookie from Baltimore out of Temple.

I know he's considered a late first/second round pick, but I think Kawann Short could be the second coming of Warren Sapp if he lands in the right spot.

Edit: I suppose that's more "underrated" than "sleeper."
